Prep the Turkey
• Remove the silver tendon from each tenderloin:
• Grab the tendon with a paper towel
• Slide a fork between the meat and tendon
• Pull it out in one piece
• Slice turkey against the grain into small pieces

Add to a bowl and toss with lime juice, olive oil, and taco seasoning. Let it marinate in the fridge for at least 30 minutes. Heat a pan over medium-high heat with ghee or high-temp oil. Add turkey and cook until fully done and slightly browned. Remove from heat and set aside

Make the Queso
• In a saucepan over medium heat, add milk and slowly heat
• Add white American cheese and pepper jack, stirring constantly until smooth
• Stir in green chiles
• Season with salt and pepper to taste
• Keep warm on low heat

Make the Mexican Rice
• Heat oil in a pan over medium heat
• Add rice and toast until lightly golden
• Stir in water, tomato bouillon, chicken bouillon, garlic powder, onion powder, salt, and pepper
• Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes until rice is tender
• Remove from heat and let sit 5–10 minutes before fluffing with a fork

Add a base layer of Mexican rice. Top with cooked turkey. Pour queso generously over the top and enjoy!
