Start by cleaning and trimming the wild turkey breast. For the optional brine, mix the water, kosher salt, brown sugar, and Worcestershire sauce until the salt and sugar are dissolved. Add the turkey breast and refrigerate for 4–8 hours.

Remove the turkey from the brine and pat it completely dry. Lightly coat with oil and season all over with Cajun seasoning or your favorite poultry blend. Tuck the thin tail end of the breast underneath the thicker portion to help the turkey cook more evenly.

Place the turkey breast on a wire rack set over a sheet pan. Bake at 300°F until the internal temperature reaches 150°F. Remove the turkey from the oven. Place the butter on a sheet of foil, set the turkey breast on top, and wrap tightly. Let it rest for 1 hour before slicing. Slice the rested turkey breast thinly against the grain.

In a bowl, mix together the shredded lettuce, mayonnaise, red wine vinegar, diced pickles, salt, and pepper. Refrigerate until ready to assemble the sliders.

Slice the Hawaiian rolls in half, keeping the bottom and top sections together. Layer the sliced wild turkey, salami, pepperoni, and provolone cheese over the bottom rolls.

Place the bottom half of the sliders in a 350°F oven until the cheese is melted and the meats are warmed through.

Brush the tops of the rolls with melted butter and season with dried parsley and garlic salt. Place them in the oven until warm and golden brown.

Add the lettuce mixture over the melted cheese, place the top buns on the sliders, and cut into individual portions. Serve immediately and enjoy!
