In a large bowl, combine the ground venison, bell pepper, onion, parsley, garlic, and all seasonings. Mix until well incorporated.

Cut the tortillas into large squares. Spread a thin, even layer of the venison mixture over each tortilla, making sure to go all the way to the edges.

Stack the tortillas on top of each other and cut them into 1-inch strips. Roll each strip so the layers are exposed, then insert 4–5 skewers about 1 inch apart through the stack.

Slice between each skewer to create individual tortilla kabobs. Place the kabobs on a preheated grill over medium heat. Cook until the venison is fully cooked through, flipping halfway through cooking.

While the kabobs cook, melt the butter in a small saucepan and stir in the garlic and parsley. After flipping the kabobs, brush generously with the garlic butter and continue cooking until done. Remove from the grill, serve hot, and enjoy!
