Place the sliced venison in a zip-top bag with grated garlic, lime juice, cilantro, and fajita
Seasoning. Mix well and marinate for at least 20 minutes.

Cook on a hot grill or skillet until your desired doneness is reached. Remove from heat, let rest for a few minutes, and slice thinly.

Melt the butter in a saucepan over medium heat, then whisk in the flour and cook for about 2 minutes. Slowly pour in the milk while whisking continuously.

Once heated and slightly thickened, add the cheddar and Colby Jack cheese. Stir until fully melted and smooth. Mix in the diced green chiles and keep warm.

Combine the tomatoes, onion, jalapeño, cilantro, and lime juice in a bowl. Stir well and set aside.

Spread tortilla chips across a sheet pan. Top with shredded cheese and sliced venison. Drizzle with warm queso.

Heat on the grill or in the oven until the cheese is melted and everything is warmed through. Top with pico de gallo, fresh jalapeños, sour cream, and guacamole. Serve and enjoy!
