In a hot pan with oil, sear the drained corn until lightly browned. Add to a bowl with red onion, cilantro, green chilies, ¾ cups mayo, 1 tsp of paprika, chili powder, salt, pepper, Cotija Cheese, and lime juice. Mix and set aside.

Mix ½ cup sour cream, ½ cup mayo, pickled jalapeños with juice, ½ tsp of cumin, paprika, chili powder, garlic powder, onion powder, salt, and pepper. Mix until smooth to make taco sauce.

Season sliced venison with taco seasoning and lime juice. In a hot pan with oil, sear to your liking. Remove and set aside.

Build a taco and serve!
