Add all marinade ingredients (everything besides Venison and "For Serving") to a blender and blend until smooth.

Slice venison thin. Add venison to a bowl, pour marinade over, add sliced onion, and mix well. Cover and refrigerate (minimum 1 hour, overnight best).

Heat the pan over high heat. Cook venison mixture in batches (do not overcrowd). Cook until browned and slightly caramelized.

Serve over rice and top with green onions and sesame seeds. Enjoy!
