Fillet and clean your crappie, making sure all bones and skin are removed. Pat the fillets dry and add them to a bowl.

Add enough mustard and hot sauce to coat the crappie fillets. Toss until each piece is evenly covered, then set aside while you prepare the hushpuppies and breading.

To make the hushpuppy batter, add the cornmeal, flour, sugar, diced onion, diced jalapeño, egg, milk, salt, cayenne pepper, garlic powder, dried onion flakes, black pepper, and baking powder to a bowl. Mix until everything is well combined.

In a separate bowl or shallow pan, combine the Louisiana Fish Fry Seasoning, flour, and Cajun seasoning.

Add the mustard-coated crappie fillets to the flour mixture and press the breading firmly into the fish, making sure each fillet is completely coated.

Heat your frying oil to 350°F. Using a small cookie scoop, melon baller, or spoon, carefully drop scoops of the hushpuppy batter into the hot oil. Fry until golden brown and cooked through. The hushpuppies will float when they are close to done. Remove and place on a wire rack or paper towel-lined plate.

Carefully add the breaded crappie fillets to the hot oil, working in batches, so you do not overcrowd the fryer. Fry for a few minutes until golden brown, crispy, and cooked through.

Remove the crappie from the oil and allow any excess oil to drain. Serve hot with fries and slaw, and enjoy a staple in The Hunt Kitchen!
